DANISH RICE PUDDING 
1 env. Knox gelatin
1/2 c. cold water
2 c. milk
2 tbsp. rice
2 tbsp. sugar
1 tsp. vanilla
1/2 pt. heavy cream

Soften gelatin in cold water. Boil milk and add rice. Cook until rice is done (about 20 minutes). Simmer with cover on stirring occasionally. When done, stir in gelatin until dissolved. Remove from heat. Add salt, sugar and vanilla. Cool whip cream and fold in rice mixture. Serve with strawberries.

Christmas Pudding: Stir in 1 blanched almond whoever gets almond will have good luck the next year.
