DELUXE AU GRATIN POTATOES 
1 med. onion
6 lg. potatoes
Salt
4 tbsp. butter
4 tbsp. flour
2 c. milk
1 c. grated sharp cheese
Paprika

Peel and slice onion and potatoes in a saucepan. Add 2 cups water and bring to a boil. Add 1 teaspoon salt and cover. Cook until tender and drain. Place in a 2-quart baking dish.

Melt butter in a saucepan and blend in the flour and 1 teaspoon salt. Add milk gradually, stirring until smooth. Cook until thickened, stirring constantly. Fold in the cheese and stir until melted. Pour the cheese sauce over the potatoes and sprinkle with paprika. Bake at 400 degrees for 20-30 minutes until bubbly and brown. Makes 6 servings.
