CHICKEN AND VEGETABLE CASSEROLE 
2 c. white meat, cooked and diced
3 c. water
1 (10 oz.) pkg. frozen peas and carrots
1 (10 oz.) pkg. frozen French-style green beans
1 c. finely shredded fresh lettuce
1 tsp. sugar
2 eggs beaten until lemon yellow
1 tsp. salt
1/4 tsp. pepper
1 (4 oz.) can mushroom stems and pieces

Bring the three cups of water to a rolling boil; add the peas and carrots and the beans, then bring to a boil again. Remove from the heat and stir in the lettuce and sugar. Set aside for a few minutes (do not cover).

Meanwhile, mix the eggs, milk, salt, and pepper. Drain the peas and carrots, beans, and lettuce. Add the chicken and the mushrooms. Stir all with light hand.
