1/2 c. butter 2/3 c. sugar 1 egg 1 1/2 c. flour 1/2 tsp. baking soda (baking) Pinch of salt 1/2 c. drained, crushed pineapple 1/2 c. nuts Lg. marshmallows ICING: 1 c. shortening 1 c. sugar 1 tsp. vanilla 1 c. milk 3 tbsp. flour Cream butter and sugar. Add 1 egg. Beat well. Add flour, soda, salt, pineapple, and nuts. Drop by teaspoon on ungreased cookie sheet. Bake at 350 degrees for 10-15 minutes. Top each cookie with half marshmallow. Put back in oven 1 minute. Cool. Ice and sprinkle coconut. Icing: Beat sugar and shortening until fluffy. Heat milk and flour; cool. Add to sugar and shortening mix; beat on high speed. Add vanilla. |
