SHERRIED SWEET POTATOES | |
8 med. potatoes 1 c. brown sugar 1/2 tsp. shredded orange peel 6 tbsp. butter 1/2 c. sherry 2 tbsp. cornstarch 1/2 tsp. salt 2 c. orange juice 1/2 c. raisins 1/4 c. chopped nuts Cook potatoes in boiling, salted water until tender; drain. Peel and cut in 1/2" slices. Arrange in 9"x13" dish. Sprinkle with little salt. In saucepan combine brown sugar, cornstarch and 1/2 teaspoon salt. Blend in orange peel and juice. Add raisins. Cook and stir over medium heat until thick and bubbly. Cook 1 minute more. Add butter, sherry and nuts. Pour over potatoes. Bake at 325 degrees for 30 minutes or until glazed. Baste occasionally. |
