SCOTTISH EGGS 
12 hard boiled eggs
2 lbs. sausage
3 eggs, beaten
2 c. unseasoned dry bread crumbs
Oil for frying

Cool eggs and remove shells. Cover each egg with sausage, dip in beaten egg and roll in bread crumbs.

Heat oil to 350 degrees or use deep fat fryer.

Fry eggs, one at a time, until golden brown. Drain on paper towel.

My kids really enjoyed this.The second time I tried this recipe to make it more healthy. I rolled crescent rolls around the egg and sausage and put it in the oven. It also was great!
