SURPRISE DATE BREAD 
3/4 c. boiling water
1/2 lb. dates, finely chopped
1 3/4 c. sifted flour
1/2 tsp. salt
1 tsp. baking soda
1/2 c. sugar
1 egg, well beaten
1 c. Cheddar cheese, shredded
1 tsp. vanilla
3/4 c. chopped nuts

Pour water over dates; let stand 5 minutes. Sift together flour, soda, salt, and sugar. Add date mixture, egg, cheese, vanilla, and nuts; mix well. Pour into greased 9 1/2 x 5 1/4 x 2 3/4 inch loaf pan. Bake at 350 degrees for 45 to 50 minutes. Remove from pan. Cool on rack.
