CHICKEN BREASTS WITH PROSCIUTTO 
Coat 3 whole chicken breasts, split, boned and skinned with seasoned coating mix (Shake 'N Bake, etc.). Arrange chicken in single layer in UNGREASED baking dish. Bake at 400 degrees for about 20 minutes. Meanwhile, cut 3/4 pound mushrooms into thin slices; saute in 3 tablespoons batter until the mushrooms are tender and slightly browned.

Stir in 1/4 cup light cream or Half and Half and 1/4 cup dry white wine or chicken broth. Pour over chicken in baking dish. Top each piece of chicken with thin slice of prosciutto or ham, then a thin slice of Gryere or Swiss cheese. Bake for about 5 minutes longer or until cheese just begins to melt. Makes 6 servings.
