FUNNEL CAKES | |
This is a FUN recipe that the kids will love to make and eat. 3 eggs 2 c. milk 1/4 c. sugar 3 to 4 c. flour 1/2 tsp. salt 2 tsp. baking powder Beat eggs and add sugar and milk. Mix and sift 3 cups flour, salt and baking powder together into a bowl. Add to flour mixture to the milk and egg mixture. Beat the batter until smooth and add more flour if needed. Batter should be thin enough to run through a funnel. In a large and deep pot add cooking oil and heat (375 degrees) until hot, using a measuring cup, funnel and your fingers. Pour cake batter through the funnel (you can make spirals, swirls, criss-crossing shapes) into the hot oil. Stop flow of batter with your finger. Brown until golden brown, place on paper towels to drain. Serve with jam or jelly. The best way to serve the cakes - sprinkle with powdered sugar. |
