FORTUNE COOKIES 
Flour to mark cookie sheet
3 tbsp. butter, softened
3 tbsp. sugar
1 egg white
1/2 tsp. vanilla
1/3 c. flour

Make up some fortunes; fold. Grease cookie sheet. Dip rim of a 3 inch cookie cutter or glass in flour. Press 4 outlines firmly on to cookie sheet.

In a small bowl beat butter, sugar, egg white and vanilla until well blended. With small spatula spread a rounded teaspoonful of batter in each outlined circle, to edge. It will be thin. Bake in preheated 400 degree oven 4-5 minutes or until edges are lightly browned. Take out of the oven, set down on a heat proof surface.

Working quickly, loosen cookie with a spatula; turn bottom side up. Place folded fortune in center. Gently fold cookie in half; hold together 3 second. Grasp folded ends of cookie; place center fold over rim of glass. Gently press ends down to bend cookie in middle. (Think about what a fortune cookie looks like.) Cool. Repeat with remaining cookies. If cookies become too brittle to fold, return briefly to oven to soften. Makes about 20. 23 calories per cookie.
