COFFEE PUDDING 
1/4 c. sugar
4 tbsp. all-purpose flour
Pinch of salt
2 c. cold strong coffee
2 egg yolks, beaten
1 tsp. vanilla
1/2 c. whipping cream, whipped until stiff

Combine sugar, flour, and salt in saucepan. Gradually stir in coffee and egg yolks. Heat over low heat, stirring constantly, until thickened. Remove and stir in vanilla. Cool. Garnish with whipped cream or shaved chocolate, if desired.
