EGG-SAUSAGE BAKE 
8 slices white bread, cubed
2 c. sharp cheddar cheese, grated
1 lb. sausage, broken up, cooked & drained (or use 1 or 2 c. cut up ham or 1 or 2 c. of bacon bits)
4 eggs
2 1/2 c. milk plus 1/2 c.
1/2 tsp. dry mustard
1 can cream of mushroom soup
1 sm. can mushrooms, chopped
1/2 c. chopped green pepper (opt.)

Grease 9"x13" pan. Layer bread, cheese, meat and mushrooms in that order. Mix eggs, 2 1/2 cups milk and dry mustard. Beat mixture and pour over top. Dilute soup with 1/2 cup milk. Pour over top mixture. Seal with foil; refrigerate overnight.

Remove foil. Bake at 300 degrees for 1 hour to 1 1/2 hours. Let set 15 minutes before serving.
