SZECHWAN HOT PEPPER BEEF | |
1 lb. beef flank steak 2 tbsp. soy sauce 1 tbsp. dry sherry 1 tsp. sugar Oil 8 dried hot red peppers, seeds removed 3 med. cloves garlic, crushed 2 fresh green chili peppers, seeds removed or 1/4 c. canned diced green chilies, cut into matchstick pieces 1 carrot, cut matchstick 1 stalk celery, cut matchstick Cut beef lengthwise into halves. Slice each half across grain into 1/4 inch slices. Mix beef, soy sauce, sherry and sugar. Heat oil until hot. Add hot red peppers. Cook over medium high heat until blackened. Discard peppers, leaving oil. Add beef and garlic and stir fry 2 minutes or until beef is nearly done. Remove beef to warm platter. Add green chili pepper, carrot and celery to oil. Stir fry until crispy tender. Add beef, cover and cook until beef is just done (about 2 minutes). Serve with rice. Serve 4. |
