RHUBARB CRUNCH 
1 c. sifted flour
3/4 c. oatmeal
1 c. brown sugar
1/2 c. melted butter
1 tsp. cinnamon
4 c. diced rhubarb
1 c. white sugar
1 c. water
2 tbsp. cornstarch
1 tsp. vanilla
Whipped cream, ice cream or frozen yogurt

Mix first 5 ingredients. Press half of this crumb mixture into greased 9 inch square pan. Cover with rhubarb Combine sugar, water, cornstarch and vanilla in small saucepan. Cook, stirring until thick and clear. Pour over rhubarb. Top with remaining crumb mixture. Bake at 350 degrees for 1 hour. Cut in squares and serve with whipped cream. Serves 8.
