SPINACH SALAD 
1 lb. fresh torn spinach, washed
1 med. tomato, cut in sm. wedges
1/4 c. Feta cheese
About 3 thin slices of mild or red onion
2 hard boiled eggs, sliced

DRESSING:

1/2 c. water
1/2 c. cider vinegar
1 egg, well beaten
3/4 c. sugar
1 tsp. salt

Boil dressing ingredients together for 2 minutes, full rolling boil. Then cool. DO NOT REFRIGERATE! Fry 4 slices bacon and crumble. Add to spinach mixture and pour cooled dressing over all.
