STRAWBERRY ZUCCHINI JELLY 
4 1/2 c. peeled and diced zucchini
5 c. sugar
1/2 c. lemon juice
2 c. strawberries, mashed
1 (3 oz.) pkg. strawberry Jello

Cook zucchini until clear, about 6 minutes. Add sugar, lemon juice, and strawberries. Boil 10 minutes. Remove from heat, add Jello, stirring well until dissolved. Put in jars (may take 2 days to thicken). Put on wax to seal. You can use pineapple in place of berries, if desired.
