PEPPERONI ARROSTO 
4 red or yellow bell peppers
1 clove garlic, finely chopped
1/4 c. fresh parsley, finely chopped
Extra virgin olive oil
Salt

Wash the peppers (do not remove stems or seeds). Place in a baking dish. Bake at 450 degrees for approximately 30-45 minutes, until peppers are soft. Remove skin and seeds.

Slice into long strips about 1/4-inch wide. Arrange in a shallow bowl. Sprinkle with parsley and garlic. Add enough olive oil to almost cover the peppers. Sprinkle with salt. Serve with Italian bread or on sandwiches.
