SOUTHERN CORN FRITTERS | |
1 can corn, drained 2 1/2 c. prepared biscuit mix 1/2 tsp. salt 2 tbsp. self rising corn meal (if using plain, add 2 tsp. baking powder) 1 tbsp. melted butter or oil 1 egg 1 c. liquid (milk or liquid from corn. Mix dry ingredients and add to melted butter and corn. Mix well. Beat egg and add to liquid. Add egg and liquid gradually to dry ingredients. Mix well. Drop by spoonfuls in deep fat. When brown, serve with molasses and butter. |
