CHREMSEL 
3 eggs, separated
1/2 tsp. salt
1/2 c. cold water
3/4 c. matzo meal
Butter or fat for frying

Beat together the yolks, salt and water. Stir in the matzo meal and let it stand for 5 minutes. Meanwhile, beat egg whites until stiff. Fold the egg whites into the matzo meal mixture. Drop mixture by the tablespoonful onto a hot greased griddle. Fry on both sides until browned. Serve with sugar, sugar-cinnamon mixed, jelly or preserves. Serves 3 at 296 calories each serving using 1 tablespoon butter for frying.

Variation: For a lighter pancake use: 1/4 c. matzo meal 1/4 c. water 1 tsp. salt

Note: Leftover pancakes may be cut into noodles and served in soup. Serves 3 at 176 calories each serving.
