4 eggs 2 c. milk 2 c. all-purpose flour 1 tsp. salt Grated peel of orange In a small bowl beat eggs and milk until smooth. In another bowl stir flour and salt together; make a well in center and pour egg mixture into it. Then beat with egg beater until batter is smooth and thin, about 1 minute. Grease 12 (5 ounce) custard cups very lightly with vegetable oil. Place on shallow baking sheet leaving space between. Fill cups half-full with batter. Preheat oven to 375 degrees and bake 30-35 minutes longer, or until well browned. Serve hot with butter and orange marmalade or jam. 123 calories per serving. |
