POT ROAST MEAT LOAF 
1 lb. lean ground beef
2/3 c. Pet evaporated milk
1/3 c. fine dry bread crumbs
1/4 c. catsup or chili sauce
1 tsp. salt
2 tsp. Worcestershire sauce
1/4 tsp. black pepper
1 bell pepper
3 med. potatoes
3 med. carrots
3 med. onions
2 tsp. dried parsley
1 tsp. salt
1/4 tsp. black pepper

Mix first 7 ingredients in large bowl. Shape into loaf, place in center of a 9 x 13 x 2 inch pan. Peel potatoes, carrots and onions. Quarter the onions and potatoes; place around the meat, slice the carrots and place them around the meat. Slice bell pepper and place on top of meat. Mix parsley, salt and pepper and sprinkle over vegetables. Cover tightly with tin foil.

Bake in oven at 375 degrees for 1 hour or until vegetables are tender. Uncover and bake 10 more to brown the meat. Serve with salad and bread. 5 to 6 servings.
