FRESH APPLE LOAF | |
4 c. peeled, chopped apples 1 c. chopped pecans 2 c. sugar 3 c. all-purpose flour 2 tsp. baking soda 2 tsp. salt 1/4 tsp. ground nutmeg 1/4 tsp. ground cloves 3/4 tsp. ground cinnamon 1 c. butter, melted 2 tsp. vanilla extract 2 eggs, slightly beaten Combine apples, pecans, and sugar and mix well. Let stand 1 hour, stirring often. This will make a liquid - but do not drain. Combine flour, soda, salt, and spices in a large bowl. Add apple mixture, stirring well. Stir in butter, vanilla and eggs. Spoon the batter into 2 greased and floured 1 pound loaf pans. Bake at 325 degrees for 1 hour and 15 minutes. Let cool in pans for 10 minutes. Yield: 2 loaves. |
