CARROT AND WALNUT BREAD 
1 c. vegetable oil
3/4 c. sugar
2 eggs
1 tsp. vanilla
1 1/2 c. shredded carrots
1 1/2 c. chopped walnuts
1 1/2 c. flour
1 1/2 tsp. baking soda
1 1/2 tsp. cinnamon
1/2 tsp. salt

Grease and flour a bread pan. In a large bowl combine first 4 ingredients. Mix and sift flour, soda and cinnamon and add to sugar mixture. Stir in carrots and walnuts. Spoon into greased pan and bake in 350 degree oven for about 1 hour or until done. Cool on wire racks. Top with following glaze. Makes 1 loaf and bake at 350 degrees.

LEMON GLAZE:

1/2 c. confectioners' sugar
1 tsp. grated lemon rind
1 tbsp. lemon juice

Combine above ingredients until smooth. Drizzle over top and sides of Carrot Walnut bread.
