CARROT RAISIN BREAD | |
1 c. grated carrots 1 c. raisins 1 1/2 c. water 1/2 c. brown sugar 1/4 tsp. nutmeg 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. cinnamon 1/4 tsp. cloves 2 tbsp. oil 2 c. flour 1/2 c. chopped walnuts (optional) In large saucepan combine carrots, raisins, water, sugar and spices. Bring to a boil. Lower heat, simmer 5 minutes. Cool, add oil. In large bowl combine flour, soda and powder. Combine with carrot mixture. Pour into a greased 9 x 5 inch loaf pan. Bake at 350 degrees for 50-60 minutes. Cool 15 minutes and remove from pan. |
