ZUCCHINI CASSEROLE 
2 lbs. zucchini, cut up and cooked
1 can cream of chicken soup
1 c. sour cream
1 (8 oz.) pkg. Pepperidge Farm stuffing mix
1 c. shredded carrot
1 sm. grated onion
1 stick butter

Melt butter and mix with stuffing mix. Put half of stuffing into casserole. Mix remaining ingredients and add to casserole. Top with remaining stuffing. Bake 350, 30 minutes.
