WATERMELON RIND PICKLE 
2 1/2 tbsp. lime
1 gal. water
10 lb. watermelon rind

Soak rind overnight in lime water; drain. Bring rind to boil in weak salt water for 20 minutes; drain. Boil in water 20 minutes.

MIX:

1/2 gal. vinegar
8 lb. sugar
2 tbsp. spice
Rind

Cook on low heat for 2 hours; seal in jars.
