SCOTCH SHORTCAKE COOKIES 
1/2 lb. butter
1 egg
3/4 c. sugar
2 1/4 c. flour

Cream butter and sugar. Add egg. Add flour all at one time. Press into pan with hand and mark with fork. Bake for 45 minutes at 325 degrees. Cut immediately into squares. Sprinkle with sugar and cinnamon. It's pretty at holidays to use different colored sugar instead of cinnamon. It's very quick and serves a lot of people.
