PORK TENDERLOIN | |
1/2 - 3/4 lb. pork tenderloin, sliced thin (1 1/2 inch strips) 2 tbsp. flour 1/4 tsp. salt 1/8 tsp. pepper 2 tbsp. butter 1 sm. onion, sliced 1/2 c. dry white wine 1 c. mushrooms, sliced 1/8 tsp. fresh or dried rosemary Green pepper slices Fresh parsley Mix salt, pepper, and flour; roll pork pieces in seasoned flour. Preheat saute pan. Add butter and heat until bubbly over medium heat. Saute pork until browned with onion over medium heat. Add wine, mushrooms, and rosemary; cover. Simmer for 25 minutes. Add green pepper and simmer 5 minutes. garnish with parsley and serve. Makes 2 servings. |
