TURKEY OR CHICKEN CURRY ON RICE 
1/4 c. chopped celery
1/4 c. chopped onion
1/2 c. butter
1/4 tsp. salt
1-3 tsp. curry powder (according to your taste)
1/2 c. flour
1 1/2 c. milk
1 1/2 c. turkey or chicken stock
1 c. cream
2 tbsp. sherry
3 c. cooked chicken or turkey
8 c. hot cooked rice

Saute celery and onion in butter until onion is soft. Combine salt, curry powder, and flour; add to onion and celery. Mix thoroughly and cook until bubbly. Add milk, turkey stock and cream, stirring briskly until smooth and thick; cook about 2-3 more minutes after mixture has thickened. Add sherry and meat. Stir gently to combine. Serve over cooked rice. Serves 8.
