SWISS STEAK
2 lb. round steak, top and/or bottom cut
3 tbsp. flour (salt, pepper & paprika added)
2 tbsp. cooking oil
1 c. ketchup
1 c. water
1 bell pepper, cut in strips
1 med. onion, slice or ring
1 sm. can mushrooms, chopped
Salt to taste
Pepper to taste

Cut steak into serving pieces (approximately 2"x2"). Make mixture of flour, salt, pepper and a dash of paprika. Sprinkle mixture on meat, pound in with meat cleaver or side of sauce to tenderize and coat. Brown pieces in hot oil. Drain and add ketchup and water to cover meat (more than 1 cup each if needed). Add pepper, onion and mushrooms. Simmer on low heat (check for sticking) for 1 1/2 hours or until meat is tender. Serve with mashed potatoes.
