TAFFY APPLE SALAD 
1/2 c. sugar
1 tbsp. cornstarch
2 tbsp. lemon juice
1 egg, beaten
1 (20 oz.) can pineapple chunks, reserve juice
8 oz. Cool whip
3 med. Red Delicious apples, cored & chopped
2 c. miniature marshmallows
1 1/2 c. salted peanuts

In saucepan mix sugar, cornstarch, lemon juice, egg and the juice from pineapple. Cook over low heat, stirring constantly, until mixture thickens (about 4 to 5 minutes). Cool. Stir in Cool Whip.

In large bowl mix apples, pineapple chunks, marshmallows and peanuts. Toss with first mixture and refrigerate 2 to 3 hours.
