TURKEY SQUARES WITH MUSHROOM
SAUCE
 
3 c. diced, cooked turkey
1 c. cooked rice
2 c. soft bread crumbs
1/3 c. diced celery (opt.)
1/4 c. pimiento (opt.)
4 beaten eggs
2 tsp. salt
1/4 tsp. poultry seasoning
2 c. chicken broth
1/3 c. milk
1 can mushroom soup

Combine turkey (or chicken), rice, bread crumbs, celery and pimiento. To the beaten eggs add salt, poultry seasoning and broth (or use chicken bouillon cubes dissolved in 2 cups hot water, then cooled). Mix thoroughly. Stir into meat mixture. Bake in greased 9"x9"x2" baking dish at 350 degrees for 55 minutes. Cut in squares and serve with Mushroom Sauce.

MUSHROOM SAUCE: Add 1/3 cup milk to 1 can mushroom soup; heat thoroughly. Makes 6 to 9 servings.
