MOM'S PEANUT BRITTLE 
3 c. sugar
1 c. white Karo
salt
4 tbsp. water or 1 1/2 c.
3 c. peanuts
2 tbsp. butter
2 rounded tsp. baking soda
2 tsp. vanilla

Bring to a boil the first 4 ingredients. Add peanuts. Cook and stir until nuts are light brown. Take off fire. Add butter, soda and vanilla. Spread out on well-greased cookie sheet.

Pecan Brittle:

1 c. chopped pecans
1/2 c. coconut
1/2 tbsp. butter
1 tsp. baking soda
1 tsp. vanilla

For half recipe, use 1 cup chopped pecans. Cook syrup until it starts turning brown before adding pecans. After stirring in butter, etc., same 1/2 cup coconut before adding soda. Then add butter, soda and vanilla. Spread out on well-greased cookie sheet.
