CINNAMON ROLLS 
1 c. milk
1/4 c. sugar
2 tsp. salt
1/2 c. water (warm)
2 eggs
1 c. mashed potatoes (leftovers)
1 pkg. yeast
1/2 c. melted shortening
5-6 c. flour

Scald milk, add mashed potatoes until mixed.

Set aside the yeast warm mixture.

In large bowl put the sugar, salt and melted shortening and potato mixture. Let stand until full of bubbles. Add enough flour to make soft batter and easily handled. Cover with liquid shortening and refrigerate overnight.

Roll dough to about 1/4" thick, cover with melted butter, sugar and cinnamon. Roll up, cut into 1" slices. Put on greased baking sheet, let rise. Bake at 350 degree oven until done about 10 to 15 minutes.

ICING: Mix 1/4 pound butter, cold coffee and powdered sugar. Let rolls cool slightly before icing.
