FILLO CHICKEN 
2 sheets fillo dough (thawed)
1/2 chicken breast (skinned and deboned)
2 tsp. chopped spinach
2 fresh mushrooms, sliced
1 tbsp. grated Cheddar cheese
Melted butter
Salt and pepper to taste

Lay dough out flat. Brush with melted butter. Place chicken on long side of double layered fillo. Top with spinach, mushrooms, cheese and season. Fold sides of dough in on chicken and roll chicken up in a bundle. Brush with melted butter. Bake 375 degrees for 35-40 minutes or until golden brown.

Fillo dough can be found in freezer at grocery store and has about 20 sheets to a box.
