YUMMY WEEKNIGHT CHICKEN | |
My family really enjoys this. You can make the taste of the chicken "your own" with the type of barbecue sauce you use. Enjoy! 4 boneless, skinless chicken breasts 1 tbsp. oil 1 small onion, sliced into rings 1 pkg. fresh mushrooms, sliced (4 to 8 oz.) 1/3 cup BBQ sauce (your favorite) 1/4 cup honey 2 tbsp. Worcestershire sauce (optional) Heat 1 tablespoon oil in skillet over medium-high heat. Cook chicken for 5 minutes until chicken is no longer pink in center, remove chicken and keep warm. In same skillet sauté onion and mushrooms for 5 minutes, or until mushrooms are golden brown. Return chicken to skillet. Combine remaining ingredients (I like to put them in a bowl and whisk it all together to make sure its combined thoroughly). Pour into skillet, bring to full boil, reduce heat and cook 2 to 3 minutes or until sauce thickens slightly, stir occasionally. We like to enjoy this with rice and a green vegetable.
