SHRIMP JAMBALAYA | |
2 tbsp. butter 1/2 c. chopped green onion 1/4 c. chopped green pepper 1 clove garlic, minced 2 tbsp. white flour 1 (16 oz.) can stewed tomatoes 1 c. cooked ham, cubed 1/2 c. water 1 c. uncooked brown rice 2 bay leaves 1/2 tsp. thyme 1/2 tsp. basil 1/4 tsp. dill weed 1/4 tsp. crushed red pepper 1/4 tsp. salt 1/8 tsp. pepper Dash Tabasco sauce 1 lb. shrimp In large saucepan, melt butter and brown onion, green pepper and garlic until tender. Blend in all remaining ingredients except shrimp. Bring to a boil, then reduce heat and simmer, stirring frequently, for about 30 minutes (or until rice is almost cooked). Add shrimp and cook 15 more minutes or until rice and shrimp are cooked. 6 servings. 300 calories per serving. |
