GOULASH SOUP 
1 lb. stew beef, cut in 1/2" pieces
2 tbsp. oil
1 lg. onion, peeled & chopped
2 tbsp. flour
1 tbsp. paprika
1/4 tsp. dried marjoram or 1/8 tsp. sage
1/2 tsp. caraway seeds or more if desired
1 clove garlic, crushed or 1/8 tsp. garlic powder
4 c. beef stock
1 (14 oz.) can whole tomatoes, approx., chopped
2 tsp. tomato puree
1 lb. potatoes, peeled & cut into 1/2" cubes
1/2-1 green pepper, seeded & chopped
Salt & pepper to taste

Saute beef in oil until browned. Add onion and cook until lightly browned. Add flour and seasonings. Cook 1 minute. Add tomatoes and stock and simmer for 45 minutes. Add tomato puree, potatoes and green pepper. Cook further 10 minutes. Check seasoning and adjust to taste.

Serve with sour cream or yogurt if desired, or add dumplings, or serve over noodles. Serves 6.
