CORN CHOWDER | |
4 slices bacon, finely chopped 1 med. onion, thinly sliced 4 c. peeled, cubed potatoes 4 c. fresh kernel corn 1 c. heavy cream or milk 1 tsp. sugar 1/4 c. butter 2 1/2 tsp. salt 1/4 tsp. pepper 2 c. milk In a large sauce pan, saute bacon over medium heat until golden. Add onion, potatoes, and 1 cup water. Cover, bring to boil and simmer 10 minutes until potatoes are tender. Add corn, heavy cream, sugar and butter. Simmer covered and over low heat 10 minutes until heated through. Do not boil. Serves 6. |
