MARINATED VEGETABLE SALAD 
3/4 c. vinegar
1 tsp. salt
1 tbsp. water
1/2 c. vegetable oil
1 c. sugar
1 tsp. pepper
1 c. chopped celery
1 green pepper, chopped
1 (16 oz.) French style green beans, drained
1 (17 oz.) can Shoepeg whole kernel corn, drained
1 (2 oz.) jar pimento, drained
3 carrots, chopped
1 onion, chopped

Combine first 6 ingredients in saucepan and bring to a boil, stirring to dissolve sugar. COOL thoroughly. Combine vegetables and stir in vinegar mixture. Cover and place in refrigerator 12 hours, stirring occasionally. CRISP and DELICIOUS!
