CHOCOLATE MINT PIE | |
1 (8 inch) graham cracker pie crust 2 sticks butter 2 c. confectioners sugar, packed well 5 sqs. unsweetened baking chocolate 4 eggs 1 1/2 tsp. mint or peppermint extract Have butter slightly soft, but not melted. Gradually add the powdered sugar and cream well. Add eggs, one at a time, blending well after each. Melt chocolate over very low heat. Add to mixture. Add extract and blend well. Pour into pie shell and chill until firm. Top with whipped cream before serving. |
