RICE PUDDING 
1 heaping c. rice (long cooking)
3 eggs
1/2 lb. butter
1 tsp. vanilla extract
1 c. sugar
1/2 gal. milk
Cinnamon

Wash heaping cup rice. Put in pot with 1/2 gallon milk. Simmer low for 1 hour or until rice is thicker than milk. Add butter, stir until melted. Add sugar and vanilla extract. Stir and shut off. Add 3 well beaten eggs and mix well. Pour into a bowl. Add cinnamon over top if desired. Make sure you stir rice often so it doesn't stick to pot. Cool off and refrigerate. Serves 6 or more.
