FRESH EVERY MORNING BRAN MUFFINS | |
1 (15 oz.) box Raisin Bran 3 c. sugar 1 c. oil 4 eggs 1 qt. buttermilk 5 tsp. baking soda 5 c. flour 2 tsp. salt 1 c. coconut 1 c. chopped nuts Dates or raisins can also be added Beat eggs and add oil, buttermilk, sugar and salt. Mix well. Add flour, soda, and bran cereal. Stir in coconut and nuts. Store in refrigerator in a large container that can be tightly sealed. Bake in muffin tins sprayed with Pam at 400 degrees for 15-20 minutes. Batter will keep for 6 weeks. |
