ZUCCHINI CASSEROLE 
2 1/2 c. zucchini, cook until tender
2 med. onions, chopped
2 grated carrots
1 carton chive sour cream
2 cans cream of chicken soup
1 tsp. salt
1/2 tsp. pepper
1 sm. jar pimentos or green pepper
1/2 pkg. Pepperidge Farm stuffing mix seasoned with butter

Mix all ingredients except stuffing to the zucchini. Mix stuffing with butter melted and line bottom of casserole. Leave some to sprinkle on top. Bake at 350 degrees for 30 to 40 minutes. This is a large recipe. May be frozen as soon as cool. HINT: Sprinkle with dry milk to prevent becoming watery.
