SEAFOOD OPELOUSAS 
1 1/2 c. rice (Hitachi measure) 9 oz. reg.
1 stick butter
10-12 oz. water
2 cubes bouillon (chicken or beef)
1 can sliced mushrooms, drained
1 can sliced water chestnuts, drained
1 sm. onion, chopped
1 bell pepper, chopped
Chopped onion tops
1/2 - 1 tbsp. Tony's or Konriko seasoning
1 lb. cleaned shrimp, crawfish or crabmeat

Rinse rice. Put all ingredients in an 8 or 10 cup Hitachi Food Steamer. Push COOK switch and cover. Stir a couple of minutes (to mix the butter). It takes about 18 to 20 minutes. Serve with corn niblets, cole slaw, and hot French bread. HINTS: In a hurry? Use dried onion and bell pepper flakes. Even frozen shrimp, use 10 ounces of water. Serves 4 to 6.
