CURRIED PORK WITH RICE 
1 lb. rice
1/2 lb. onions, cut in rings
1/2 lb. pork, diced
1/2 c. butter
Salt & pepper to taste
1 tsp. curry powder
Soy sauce to taste
1 1/2 c. cooked mixed vegetables

Cook the rice in boiling water for about 12 minutes or until tender. Drain, rinse with cold water and drain well. Cook the onions and pork in half the butter in a skillet for about 15 minutes or until brown. Add remaining butter, half the rice, salt, pepper, curry powder, 1 cup water and soy sauce and cook over low heat, stirring frequently, until pork is tender. Add the mixed vegetables and remaining rice and mix well. Heat through, then place on a large heated plate. Garnish with slices of tomatoes. May serve with lettuce, cucumber and pickles.
