SQUASH PIE 
3 c. thinly sliced zucchini
1/2 c. finely chopped onion
1 clove garlic, finely chopped
1 c. Bisquick
1/2 c. oil
1/2 c. grated Italian cheese
4 eggs
2 tbsp. parsley flakes
1 tsp. oregano
Salt and pepper to taste

Beat eggs, add spices and oil, mix well. Add Bisquick and mix until blended. Add squash and onion and mix only until coated. Bake at 325 degrees for 45 minutes to 1 hour in greased glass pan approximately 8 x 11 inches.
