SWEET POTATO PIE 
2 c. mashed & whipped yams
1/4 c. eggs
3/4 c. sugar
1 1/4 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. ginger
1/4 tsp. cloves
1 (3 oz.) can evaporated milk
1/2 c. chopped pecans or walnuts (optional)
1/2 c. dark raisins (optional)
1 (9 inch) pie shell, unbaked

Mix in medium bowl, whipped potatoes, eggs, sugar, cinnamon, salt, ginger, cloves and milk. Mix well. Stir in nuts and raisins. Pour into pie shell and bake at 425 degrees for 15 minutes. Reduce heat to 350 degrees and bake 45 more minutes or until knife inserted in center comes out clean. Refrigerate. Break eggs into a measuring cup until reaches 1/4 cup.
