FUNNEL CAKES 
2 2/3 c. plain flour
1 tbsp. sugar
1 tsp. baking powder
1/4 tsp. salt
2 eggs
1 1/2 c. whole milk
1/4 tsp. vanilla
Wesson oil

Beat all ingredients until smooth. Heat oil on medium-high heat, in a 3 inch deep frying pan. Oil should be 2 inches deep. Pour 1/3 cup of mixture in funnel. Release mixture into oil in a circular motion from the center out. Turn over when bottom is a golden brown. Sprinkle with powdered sugar, or cinnamon sugar, or cover with maple syrup.
