MANDARIN SNOW FLAKE DELIGHT 
1 (18 1/2 oz.) white cake mix
1 (11 oz.) can mandarin orange slices
3 egg whites
1/2 c. vegetable oil

Combine all ingredients. Mix for 2 minutes at medium speed. Pour into a greased and floured 9x13x2 inch baking pan. Bake at 350 degrees for 25-30 minutes or until done. Cool in pan 10 minutes. Remove from pan to wire rack and cool. Transfer to serving platter. Frost top and sides with frosting and refrigerate.

FROSTING:

1 (9 oz.) carton frozen whipped topping, thawed
1 (15 1/4 oz.) can crushed pineapple in its own juice
1 (3 1/2 oz.) pkg. instant vanilla pudding mix
1 c. flaked coconut

Combine all ingredients in bowl, reserving 1/2 cup coconut. Mix well. Sprinkle remaining coconut on top of cake.
